When the Speed is set to 1 on a conveyor, what do that mean?  1 meter per minute/second/something else?

Depends on the component or type of conveyor, as each may have a different gear ratio
The transmission ratio of the chains is 0.075 with respect to the rollers, therefore a speed of 1 on the rollers is equivalent to 13.3 on the chains.

For the conveyor belt, a speed of 1 becomes 0.3 meters per second (0.3 m/s) due to transmission.
